Pi Day is one of my favorite days of the year! I’m such a sucker for a delicious, flaky crust and everything that comes inside it. So today, in honor of Archimedes, here is my recipe for easy Greek quiche. Or, as I have named it for the sake of cuteness, Archimedes pie.
This is a modified “Easy Quiche” recipe from my boyfriend’s mom, whom I believe got it from Ina Garten. Don’t worry–despite my pretty stock photo, you don’t have to make the crust yourself. I certainly didn’t! I really enjoy making quiches because, like pizza or salad, they can be so easy to put together and you can use just about any combination of ingredients your heart desires. But here’s what goes into my Archimedes pie.
Ingredients
- 1 pre-made pie crust***
- 1 cup freshly-shredded mozzarella cheese
- 1/4 cup crumbled feta cheese
- 1 cup heavy cream
- 3 eggs
- Kalamata olives
- Mushroom slices or pieces
- Spinach leaves
- Tomato
- Red onion
- English cucumber (It’s seedless so it doesn’t create as much moisture as regular cucumber.)
- Green bell pepper
- Fresh minced garlic
***Here’s a fun tip: These pre-made crusts usually come in packs of two. If you have a picky eater in the house, you can just double the parts of the recipe you both want and let them omit anything they don’t want from their own.
Seasonings
- Dill
- Mint
- Oregano
- Salt
- Pepper
- Nutmeg
- Seasoning alternative: Authentic Gyro Seasoning from Hilda’s Kitchen Blog (Easy to make! Includes dried oregano, dried parsley, sea salt, paprika, lemon pepper, ground coriander, black pepper, dried rosemary, dried thyme, cinnamon powder, and cayenne pepper.)
Steps
- If you’re making the seasoning from scratch, follow Hilda’s instructions (linked above) to create the Authentic Gyro Seasoning mix.
- Whisk 3 eggs with 1 cup of cream. Add your seasonings to the mixture. (There’s no set amount of seasoning; I like a lot, so I add a lot.)
- Put the grated mozzarella on the crust. (Try to get it evenly on the bottom and sides as much as possible to cover the crust.)
- Layer the rest of your ingredients evenly on top of the cheese. Chopping them makes for easier distribution.
- Pour the egg mixture on top of that.
- Bake at 375 for 30-45 minutes.
